Also called Galangal or Blue Ginger. Thai Ginger tastes similar to Ginger with a more peppery taste. Used extensively in Thai, Vietnamese and Indonesian cooking.
The edible part of the plant is the rhizome or fleshy root system that is quite fibrous and needs to be be very finely chopped or grated before adding to the pan. It can also be cooked whole and served as a vegetable. The rhizomes are ready for harvesting when the leaves turn yellow. The dried form is sometimes called Laos powder.
Thai Ginger can be used to prevent nausea, as a stimulant, an antibacterial agent and as a body deodoriser.
Also ,makes a lovely garden specimen with attractive sprays of small white flowers in summer.
