Salvia officinalis
Tuscan food is known tor its simple style yet complex flavours coming trom a blend of regional herbs that have been used for cooking and healing since Roman times. A medium growing, olive leaved sage from southern Europe with lilac to purple flowers in summer.
Food Partners:
Blends well onions, tomatoes and garlic. The strong flavour is best used with heavy or game style meats.
Health/Cooking/Medicinal:
Sage can be added at any stage in the cooking and the young leaves are a litle milder and can also be used in teas, jellies and various drinks. Will aid a sore throat when used as a gargle with some mint.
Planting:
Prefers a well-drained location in full sun. A tough perennial that thrives in dry areas.
Cut back any old or dead foliage.
