Bronze Fennel Foeniculum vulgare var. rubrum
A tough large herb with a strong aniseed flavour and attractive bronze foliage.
Flavours/Food Partners:
Parsley, chives, society garlic, tarragon, garlic, shalots and oregano. Salmon, cheese and egg dishes, cucumber, zucchini, yogfurt and soups.
Health/Cooking/Medicinal:
An easy-to-use herb that gives an uplifting aniseed flavour to a wide range of dishes. For best effect add leaves just prior to serving. Collect seeds and use them in bread, cakes and scones or grind them over a meal instead of pepper. Seeds can be ground and added to herbal teas. Finely cut foliage adds color and flavour to a green salad.
Planting:
This large shrub will grow in most soil types and sun levels. Hardy to very wet soil.
Cultivation:
Pick leaves as needed, remove seeds prior to them ripening to avoid self-seeding.
